Boucher Blue
Named after the Boucher family, Boucher Blue is our most popular cheese and is based on a French Fourme d’Ambert. Its mild character makes it a true crowd pleaser, even for those who may be intimidated by blue cheese.
Smooth, very creamy, and well-balanced with undertones of chestnuts, white pepper, and truffles. It is mild and crumbly. Serving Suggestion: Try over a green salad or with a bold red or sweet white wine. Excellent as a compound butter and served with beef. |
Gore-Dawn-ZolaThis cheese has a melt-in-your-mouth texture. It is buttery, rich, and sharp, with a complex character and bitter chocolate aroma.
With a unique flavor profile distinct from other blues, this is a Green Mountain Blue Cheese specialty. Made in the Gorgonzola style, Gore-Dawn-Zola is named after the road our farm is on, the Gore Road, and Cheesesmaker Dawn-Morin Boucher. Serving Suggestion: Perfect for use in desserts or appetizers with caramelized walnuts, sweet raisin bread, fruit, or jam. Try simply drizzling with honey. |
Madison BlueA middle ground between our other blues, Madison is more fragrant and robust than Boucher Blue but not as strong as Gore-Dawn-Zola. It has a slight lactic tang with bright and nutty flavors.
Named after Dawn’s niece, Madison, this is a true farmhouse cheese unique to our farm. Serving Suggestion: Madison is great for melting. It is incredible paired with tomato, garlic, and caramelized onion on a pizza. |
